This page is for the 16 cavity model. The size of each cavity is identical - its only the number of total cavities thats different. In addition you will see that there are two options for the 16 cavity model.
1️⃣ GSME(abbreviation for Gierre + Smeg oven): Pan Size: 43cm x 32cm x 2.2cm (Size of cavity: 7.7cm x 5cm x 2.2cm)
2️⃣ UNOVEX (abbreviation for UNOX & Benix oven): Pan Size: 46cm x 33.5cm x 2.2cm (Size of cavity: 7.7cm x 5cm x 2.2cm)
Gierre and Smeg usually share the same tray size and UNOX and Benix ovens share the same size thus there are two sizes.
The 16 cavity models are designed such that you can directly slide it into your oven rack without the need to put it on another pan. This is extremeley convenient and time saving. HOWEVER please note that oven sizes are different and you must check the dimensions carefully before ordering.

This is as good as a madeleine pan can get. Latest silicone coating technology has been applied which produces more than excellent results - as a pastry chef this is my no.1 choice. Its a typical Korean style pan which has deep cavities that result in big bellies for your madeleines.
What I love about this pan is that its a rigid pan with silicone coating. There has been full silicone moulds available in the market but these are not only wobbly but they are poor at heat conduction which is a downside when it comes to madeleine/financiers where you only bake for approx 10mins.

🚨Secret Tip on using the silicone coated pan🚨
This pan does not require greasing with butter which is magic. However it can still stick if not used correctly. Madeleines should be removed from the cavity as soon as it comes out of the oven - if left in the cavity condensation will occur and not even the silicone coating would be able to prevent sticking.
